
New year, new resolutions? 🌟
After all those festive treats, it's time for something light! 💚 How about our recipe for stuffed peppers – delicious, filling, and healthy?
Ingredients for 2 people
- 3 peppers
- 1 tbsp olive oil
- 1 tsp salt
- Black pepper
- 200 g Beneto's pasta
- 100 g porcini mushrooms (sliced)
- 1 carrot (sliced)
- 1 small red onion (diced)
- 1 garlic clove (crushed)
- 1 tbsp olive oil
- 1 tbsp strained tomatoes
- 30 g frozen peas
preparation
- Halve each pepper, brush with olive oil and season with salt and pepper.
- Bake peppers in a baking dish at 180 degrees for 20 minutes.
- Meanwhile, lightly fry the garlic and red onion in a pan with olive oil.
- After 1 minute, add the porcini mushrooms and carrot, season with salt and pepper and cook for 5 minutes.
- Add pasta, frozen peas and the passata, mix everything together and remove from the heat after 2 minutes.
- Fill the peppers with the pasta filling and bake in the oven again for 5 minutes.
- Enjoy!
